Zucchini Lasagna Roll-Ups
*The original recipe is from the delish.com, but I made a few corrections to suite my taste better! Noted below.
Ingredients:
1 (15 oz.) containers ricotta
3/4 c. grated Parmesan
2 large eggs
1 tsp. garlic powder
kosher salt
Freshly ground black pepper
1 c. marinara
5 large zucchini, sliced 1/8" thick (this part is hard but made us laugh a lot)
1 c. grated mozzarella
*I halved the recipe when I made it since it was only 2 of us eating. It was still plenty for 2 people.
Directions:
1. Preheat oven to 400 degrees F. Make ricotta mixture: In a small bowl, combine ricotta, 1/2 cup Parmesan, egg, and garlic powder and season with salt and pepper.
2. Spread a thin layer of marinara into the bottom of a 9"x13" baking dish.
3. On each slice of zucchini, spoon a thin layer of sauce, then top with a thicker layer of ricotta mixture, and sprinkle with mazzarella.
4. Roll up and place in baking dish.
5. Sprinkle with remaining 1/4 cup Parmesan.
6. Bake until zucchini is tender and cheese is melted, 30 minutes.
What we changed:
#2. We found it much easier to spread a thick layer of ricotta onto the zucchini before marinara.
#5. We topped with a little more marinara first, then sprinkled with Mozzarella instead of Parmesan
We didn't add meat, but next time, my sister and I both would prefer a little beef in it! We plan to add beef to the marinara and leave everything else the same!

Cutting the zucchini into thin slices was by far the hardest part of this recipe. There has to be an easier way, but we didn't find it. The end result it what counts- it was delicous!

Guacamole
*The original recipe is from the Young Living Blog, but I like to throw my own twist on recipes to make them more suitable to my taste buds.
Ingredients:
2 organic Avocado, mashed
3 drops Young Living Citrus Fresh Essential oil
3 drops Young Living Lime Essential Oil
1 organic Roma tomatoes, seeded and diced (I like mine diced tiny)
2 Tbsp. organic onion, diced (again, I like mine diced tiny)
1 Tbsp. organic Cilantro, chopped
1 clove organic garlic, minced
Salt and Pepper to taste
Directions:
1- Cut avocados in half (long way) and scoop insides into a bowl. Mash until almost smooth. I use a hand mixer sometimes, depending how much work I want to put in!
2- Chop all your veggies.

1 lb. fresh strawberries; diced
1 lb. fresh pineapple; diced
12 oz fresh blueberries; diced
12 oz red grapes; diced into halves
4 kiwis; peeled and diced
1 (15 oz.) can mandarin oranges in juice; drained well and sliced into halves
2 bananas; ripe & diced*
Honey Lime Dressing:
¼ cup honey
2 tsp. lime zest (zest of 2 medium limes)
3 drops YL Lime essential oil
Directions:
Add all fruit into a large mixing bowl. In a small mixing bowl, whisk together the honey, lime zest and lime juice. Pour over fruit just before serving and toss to evenly coast (as it sits for a few minutes the juices will gather at the bottom, so toss again before plating)
*the bananas aren’t picture. I decided to add them later on for better taste.
Mint Chocolate Protein Shake

Prep Time: 3 minutes
Ingredients:
1 cup- unsweetened almond milk
1 scoop- Pure Protein Complete Chocolate Deluxe
1 drop- Peppermint Vitality
1 handful- spinach
12 ice cubes
Directions: Start by placing all ingredients into a blender. Blend until smooth and serve. This is the perfect drink to take in your Young Living shaker bottle!
Strawberry Lemon-Lime Popcicles

*Makes about 6 half cup popsicles
Ingredients:
1/2 cup- evaporated cane juice crystals
2 pints- fresh strawberries, hulled and sliced
1/2 cup- water
4 drops- Lime essential oil
2 drops- Lemon essential oil
1 drop- Black Pepper essential oil (optional)
1/8 teaspoon- fine sea salt
Directions: Bring evaporated can juice crystals, strawberries, and water to a boil in a small saucepan. Simmer until the crystals are dissolved. Remove from heat and cool to room temperature. When cooled, add Lime, Lemon, Black Pepper (if using), and salt. Stir to combine. Process the mixture in a food processor or blender until smooth. Divide between popsicle molds, leaving 1/4" space at the top for expansion. Freeze overnight or until completely frozen before removing from molds.
Best-Ever Einkorn Banana Bread

2 c- Coconut Milk (You can also use Almond Milk)
2 c- Spinach, tightly packed

1 c- Peaches
1/2- Avocado
2 Drops- Peppermint Essential Oil

Instructions:
Bland together all ingredients until smooth. For a colder drink, use frozen fruit. This is very similar to my Green Smoothie, except it is more of a drink than a smoothie and less fruit.

Directions:
It's simple from here... Cover the bottom of a tray with Cinnamon Bark Essential Oil-about 10 drops per 100 toothpicks. You can also use Spearmint Essential Oil or Peppermint Essential Oil also! Spread the toothpicks evenly in the bottom of the tray and let sit overnight. Package in a cute tin or box for a perfect DIY gift that will give anyone a breath of fresh air.

Main Ingredients:
7 Lemons (peeled and juiced)
2 Limes (peeled and juiced)
14 cups Water
1 1/2 cups Blue Agave
Oil:
1 drop of Lavender Essential Oil
Instructions:
Mix main ingredients together well.
Add Lavender oil, mix and chill.
Add more water or Blue Agave, depending on the size and tartness of fruit.
Note: Be careful that you don't add more than a drop of lavender oil so that it does not overpower your lemonade!
Essential Dill Dip

Main Ingredients:
1 package Cream Cheese
1 tsp. Bragg Liquid Aminos
Oil:
1-2 drops Dill Essential Oil
1-2 drops Lemon Essential Oil
Instructions:
Mix main ingredients together. Add Essential Oils and mix again. Serve with fresh vegetables or crackers.
Caution: add 1 drop each of Dill and Lemon, taste and add more if needed. Don't want to overpower the dip!)
About the oils:
Dill (Anethum Graveolens) oil has a spicy, fresh scent that is stimulating, revitalizing, and balancing. Dill Essential Oil is most commonly used for cooking or preparing food to enhance flavor.
Lemon (Citrus Limon) oil is cold pressed from the rinds of lemons and has a strong, purifying, citrus scent that is revitalizing and uplifting. Lemon consists of 68% d-limonene, a powerful antioxidant. It is delightfully refreshing and may also be used to enhance the flavor of foods.
